Ingredients
- Batter
- 3 eggs separated
- 120 milliliters buttermilk, 2/3 cup
- 225 milliliters half and half, 1 cup
- 3 tablespoons butter, unsalted melted
- 150 grams plain flour, 1 cup
- ½ teaspoon salt
- ½ teaspoon baking soda
- Apples
- 2 green apples, core, peel, thinly slice
- 1 teaspoon vanilla
- 1 ½ tablespoons honey
- 1 tablespoon lemon juice
- Topping
- 235 milliliters sour cream, 1 cup
- 2 tablespoons honey
Directions
1. In blender combine the egg yolks, buttermilk, half and half and butter. Sift in flour, salt, baking soda. Combine until smooth. Let rest for 30 minutes. |
2. Slice apples thinly cross-wise. Toss with vanilla, honey and lemon juice and let stand . |
3. Fold apples into batter. Beat egg whites until stiff and fold them into batter. |
4. Heat a heavy skillet over medium heat. Pour 1/4 cup of batter onto skillet and cook until golden brown on both sides, about 3-4 minutes in all. Continue with remainder of batter. Keep pancakes warm in 200*F/400*F/GM6 oven. |
