Ingredients

  • 6 medium artichokes
  • 3 onions thinly sliced
  • 3 tablespoons olive oil
  • ¼ cup orange juice
  • ¼ cup tangerine juice
  • 2 tablespoons lemon juice
  • 2 tablespoons white wine vinegar
  • ½ teaspoon salt
  • 1 ½ tablespoons capers salted, rinsed
  • 4 anchovies salted
  • ½ teaspoon olive oil
  • 1 tablespoon sugar, caster

Directions

1. Remove tough outer leaves, trim leaves, peel stems and bases. Cut each artichoke in half and remove the choke. Place artichoke halves and the sliced onions in a large, heavy pan with the 6 tablespoons of olive oil, juices, wine vinegar and salt. Add enough water barely to cover. Bring to a simmer, cover and cook very gently for 30-40 minutes until the artichokes are tender but still hold their shape.
2. Take the artichokes out of the pan and arrange on serving dish. Add capers to sauce, and cook gently, until thickened and reduced. Place the anchovies and 1 teaspoon olive oil in a bowl over simmering water and mix until dissolved. Add to sauce with sugar and cook 5 minutes or until sugar dissolved. Pour over chokes, leave to cool and sere cold.

Notes:Change servings back to 4, then rescale to serve 8.
