Ingredients

  • 1 ¾ cups pasta flour
  • 3 eggs
  • 3 tablespoons olive oil
  • Filling
  • ½ pound hamburger
  • ½ medium onion, finely chop
  • 1 clove garlic, smashed
  • 3 tablespoons fresh parsley, finely chopped
  • Primavera Sauce

Directions

1. In food processor combine flour, egg and oil until a smooth dough. Allow to rest 30 minutes.
2. Sauté onion until soft. Add garlic and cook 1 minute. Remove from heat and add to hamburger and parsley in a medium size bowl. Combine well.
3. Roll 1/4 of the dough very thin. Cut into 4-finger wide squares. Place a rounded tablespoon of meat mixture into center of half of the squares. Moisten outer edge with water and carefully top with another square so no air remains between layers. Use a fork and press all around 4 edges to seal. Place on heavily floured baking tray. Continue with remaining pasta. The pasta must remain soft so it is best to work as a team.
4. Cook ravioli in boiling, salted water until they rise to the surface. Drain ravioli and place in large, warm serving dish. Top with primavera sauce and fresh basil.
