Ingredients

  • 285 grams blackberries
  • 75 grams sugar, caster
  • 150 milliliters water
  • 1 ½ tablespoons rosemary optional
  • 750 milliliters champagne italian

Directions

1. Simmer blackberries, sugar, water and rosemary in heavy saucepan, uncovered, stirring occasionally, until thickened and reduced by about 2/3, about 20 minutes.
2. Pour into a very fine sieve set over a glass measure and let stand 5 minutes. There will be about 1/3 cup. Discard solids - do NOT press on them. chill syrup, covered, until cold.
3. Divide Prosecco (italian sparkling white wine) among 6 small flutes, then pour 1 1/2 teaspoon syru into each drink.
4. There is extra syrup to combine with sparkling water or lemonade for delicious nonalcoholic drinks. Syrup keeps, covered and chilled, 3 days.
