Ingredients
- 285 grams blackberries
- 75 grams sugar, caster
- 150 milliliters water
- 1 ½ tablespoons rosemary optional
- 750 milliliters champagne italian
Directions
1. Simmer blackberries, sugar, water and rosemary in heavy saucepan, uncovered, stirring occasionally, until thickened and reduced by about 2/3, about 20 minutes. |
2. Pour into a very fine sieve set over a glass measure and let stand 5 minutes. There will be about 1/3 cup. Discard solids - do NOT press on them. chill syrup, covered, until cold. |
3. Divide Prosecco (italian sparkling white wine) among 6 small flutes, then pour 1 1/2 teaspoon syru into each drink. |
4. There is extra syrup to combine with sparkling water or lemonade for delicious nonalcoholic drinks. Syrup keeps, covered and chilled, 3 days. |
