Ingredients
- 450 grams yogurt plain, whole milk
- 75 grams sugar, caster 1/8c sucrolose OK
- 1 teaspoon vanilla
- 40 milliliters water
- 2 teaspoons gelatin
- ¼ teaspoon ground cardamom
- 2 oranges sectioned
- 60 milliliters orange juice
- 40 grams honey
- ⅛ teaspoon cinnamon
Directions
1. Whisk together yogurt, sugar, and vanilla. Add water to microwaveable bowl. Sprinkle gelatin and cardamom over water. Let stand 5 minutes. Microwave for 20 seconds until just dissolved. Add to yogurt mixture. Pour yogurt into 1-cup ramekins and chill, covered, until set, about 1 1/2 hours. |
2. While yogurt is chilling, cut peel from oranges and section. Bring orange juice, honey and cinnamon to a simmer and reduce to about 4 tablespoons. Add orange sections and gently stir to coat. Cool to room temperature. |
3. Run thin knife around edge of ramekin to loosen pudding, then dip into bowl of hot water. Invert pudding onto a plate. Spoon syrup over pudding and arrange orange around side. |
4. Yogurt pudding can be chilled up to 1 day. |
