Ingredients
- 175 grams garbanzo beans
- 225 grams onions finely sliced
- 1 stick celery finely chopped
- 1 leek finely chopped
- 2 cloves garlic minced
- 85 milliliters olive oil
- 1 tablespoon Chile oil see below
- 1 teaspoon curry powder
- 1 teaspoon tomato paste
- 400 grams tomatoes canned
- 110 grams chorizo finely diced
- 1200 milliliters boiling water
- 1 tablespoon fresh basil or chives
- salt and pepper
Directions
1. Soak beans overnight with baking soda. |
2. Sauté onions, celery, and leek in olive oil until soft. Add garlic, chili oil and curry powder and cook for 3-4 minutes. Add tomato paste and canned tomatoes and bring to a simmer. Add beans and chorizo. Pour in the boiling water, cover and simmer for 1 1/2-3 hours, until beans are tender. You may have to add more water. |
3. Check seasoning. Serve with fresh basil or chives as garnish. |
