Ingredients

  • 1 lb. Swiss chard chopped
  • 3 tablespoons olive oil
  • 1 small onion sliced
  • 1 clove garlic
  • 1 cup garbanzo beans cooked and drained
  • 1 large tomato concassed
  • 2 tablespoons water
  • 2 tablespoons lemon juice
  • salt and pepper

Directions

1. Remove and discard white stems from the swiss chard and chop the leaves coarsely.
2. Heat the olive oil in a large skillet over low heat. Add the onion and sauté until onion softened, add garlic. Add beans and tomatoes and cook, stirring for 5 minutes. Add Swiss chard and water, cover, and simmer until the chard is wilted, 3 minutes.
3. Remove the skillet from the heat, Stir in the lemon juice and salt and pepper. Allow to cool to room temperature before serving.

Serving Ideas:Usually served cold or at room temperature.
