Ingredients
- 300 grams plain chocolate, expensive
- 140 grams butter, unsalted
- 150 grams sugar, caster
- 5 large eggs separated
- 55 grams flour
- Ganache
- 140 grams plain chocolate, expensive chopped
- 40 milliliters whipping cream
- 40 grams butter, unsalted softened
- 2 teaspoons triple Sec
- Garnish
- raspberries whole, 1 pint
Directions
1. Oven to 350*F/175*C/GM 4. Butter, parchment, butter, flour, sugar springform pan. (5 min) |
2. Melt chocolate and butter. Combine with sugar. Cool to room temperature. Transfer mixture to a large bowl. (10 min) |
3. Add yolks, 1 at a time, to chocolate mixture, whisking well after each addition. Beat whites until soft peaks. Sift flour over mixture, whisk in then loosen mixture with whites. Fold in remaining whites. Pour into prepared springform pan and bake 35 minutes or until tester comes out with moist crumbs adhering. Cool cake completely in pan on rack. Cake may be made up to this point 2 days ahead and kept in an airtight container at room temperature. (10 min) |
4. Ganache: Scald cream then add chocolate. Add butter and triple Sec. Stir until smooth. (10 min) |
5. Assemble: Remove cake from pan. Invert onto serving platter. Pour enough warm ganache evenly over cake to coat. Let stand 5 minutes. Scrap excess ganache from platter and pour over cake again making sure it is coated completely. Let cake stand at room temperature until ganache is set-1 to 6 hours. May want to put a sheet of acetate on top, not only for transporting, but also to get a super smooth, shiny surface. (30 min) |
6. Clean-up (10 min) Just before serving, cover top with raspberries. |
Notes:For 35 people, light buffet style dinner, 2 cakes plus 15 passion fruit creme brulees and 1 portion of coconut macadamia truffles left almost one whole cake, 1 creme brulee and 1/2 of truffles.
