Ingredients
- 55 grams butter, unsalted
- 55 grams brown sugar, packed
- 45 milliliters corn syrup
- 30 grams plain flour
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg freshly grated
Directions
1. Preheat oven to 375*F/190*C/GM 5. Get out a rolling pin. Make 3" diameter circle stencil. For petit fours, make 2" diameter circle. |
2. In a saucepan melt butter with brown sugar and corn syrup until sugar is dissolved. Remove pan from heat and stir in flour, cinnamon, nutmeg and a pinch salt until smooth. |
3. Drop 1 teaspoon batter on teflon sheet. Space 3" apart. Bake 5-6 minutes, or until dark golden. Let rest 1 minute, then as you lift off sheet, roll onto rolling pin. Only cook as many as can fit on a rolling pin. |
4. Once cool, transfer to an airtight container. Continue with remaining batter. Tuiles keep 5 days in an airtight container at cool room temperature. Makes about 26 tuiles. |
