Ingredients

  • Chile Broth
  • 2 dried chilies, New Mex red
  • 1 6 inch corn tortillas
  • 15 grams butter, unsalted
  • 200 grams onion chopped
  • 4 cloves garlic
  • 590 milliliters chicken stock
  • 60 milliliters whipping cream
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar, brown
  • For Beef
  • 3 tablespoons whole coffee beans medium roasted
  • 1 tablespoon unsweetened cocoa
  • teaspoon cinnamon
  • 900 grams beef tied at 1/2" interv.
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 30 milliliters olive oil
  • 340 grams mushrooms, shiitake quartered
  • 30 grams butter, unsalted
  • Garnish
  • watercress sprigs

Directions

1. Make broth: Seed & stem chiles. Tear chiles and tortilla into pieces.
2. Sauté onion until golden. Add garlic, chile and tortilla and cook until softened. Stir in stock and bring to boil. Simmer, partially covered, 10 minutes. Purée mixture until smooth. Sieve, press hard on solids, discard solids. Whisk in cream, salt and brown sugar. Broth may be made 2 days ahead and chilled, covered.
3. Prepare Beef: Preheat oven to 400*F/200*C/GM 6.
4. Finely grind coffee beans. In a bowl whisk coffee with cocoa powder and cinnamon. Pat beef dry and rub with salt and pepper. Rub beef with oil. Sprinkle coffee mixture over a sheet of parchment paper and roll beef until well coated. Put beef on rack in roasting pan and let stand at room temperature 30 minutes.
5. Roast beef in middle of oven 10 minutes. Reduce temperature to 250*F/120*C/GM1 and roast beef about 1 hour more or until meat thermometer registers 120*F. Transfer beef to cutting board and let rest, loosely covered with foil, 10 minutes.
6. Bring chile broth to boil and reduce to spoon coating consistency. Keep warm.
7. Discard mushroom stems. Sauté mushroom caps in butter until brown. Season to taste.
8. Remove string from beef and slice into 1/2 inch thick slices. Spoon enough broth into 6 wide shallow soup bowls to cover bottoms and add 2 or 3 slices of beef to each bowl. Spoon more broth over beef if desired and top with mushrooms. Garnish with watercress.
