Ingredients
- Quick Puff Pastry
- 300 grams butter, unsalted
- 750 grams plain flour
- 1 teaspoon salt
- 200 milliliters cold water
- 1 teaspoon black pepper optional
- Pasty
- 225 grams beef chuck roast thinly sliced
- 1 medium potato peel & thinly sliced
- 1 large onion peel & thinly sliced
- 1 small turnip peel & thinly sliced
- 30 grams butter, unsalted
- 1 egg beaten
- salt and pepper
Directions
1. Pastry: Cut the chilled butter into small cubes. Sieve the flour with the salt. Add the butter, gently working into the flour but not totally breaking down. Add the water, mixing to a pliable dough, still with pieces of butter showing. |
2. Turn onto a floured surface and roll as for classic puff pastry, into a rectangle. Fold in thirds. Leave to rest for 20 minutes. The pastry now needs to be rolled three times more, resting it for 20 minutes between each turn. |
3. Pasty: Roll the pastry between 1/8-1/4 inch thick. Cut discs approximately 8"in diameter. Season the meat and vegetables separately with salt and lots of pepper. Melt the butter and trickle over the vegetables. Layer the meat to one side of the pastry between individual layers of potatoes, turnip and onion, leaving a border of pastry to seal. When laying the final stages, to achieve a better finished shape, carefully arrange the vegetables in a domed fashion. |
4. Brush the border of the pastry with beaten egg. Fold the pastry over and seal. The edge can now be rolled and pinched from one end to the other. Place the pasties on a greased baking tray and brush with more egg. It's now best to refrigerate before baking. |
5. Pre-heat the oven to 200*C/400*F/GM 6. Place the pasties in the oven and bake for 15-20 minutes until golden brown. Now reduce the oven temperature to 175*C/350*F/GM4 and continue to cook for 30-35 minutes. Serve immediately. |
