Ingredients

  • Pastry dough
  • 1 ¼ cups plain flour
  • 85 grams butter, unsalted 1/4" cubes
  • 2 tablespoons vegetable shortening
  • ¼ teaspoon salt
  • 3 tablespoons cold water
  • Filling
  • 225 grams crab claw meat pick over
  • 4 eggs
  • 2 cups heavy cream
  • 2 tablespoons fresh chives finely chopped
  • 2 tablespoons fresh parsley finely chop
  • 2 tablespoons fresh cilantro finely chop
  • ½ teaspoon seafood seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • teaspoon nutmeg freshly grated
  • 55 grams cheese, monterey jack
  • 55 grams cheese, swiss

Directions

1. Make pastry:Blend together flour, butter, shortening and salt in a food processor until coarse meal texture. Drizzle with 3 T ice water and pulse. Squeeze a small handful. If it doesn't hold together, add more ice water, 1/2 T at a time. Turn out mixture onto a work surface and divide into 4 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute fat. Gather dough together with scraper and press into a boll, then flatten into a 4" disk. Chill dough, wrapped in plasticwrap, until firm, at least 1 hour.
2. Roll out dough into 12" round on lightly floured surface with a floured rolling pin and fit into pie plate. Trim excess, leaving a 1/2" overhang. Then fold overhand under pastry and press agaist rim of pie plate to reinforce edge. Decroate edge, prick bottom and sides. Chill until firm.
3. Put oven rack in middle position and preheat oven to 375*F/190*C/GM 5.
4. Bake blind until just set, about 12 minutes. Remove paper/weights and continue baking until pale golden and done, about 10 minutes. Cool for 20 minutes.
5. Filling: Whisk together eggs, cream, herbs, seafood seasoning, salt, pepper, and nutmeg,then stir in cheeses and crabmeat. Pour into prebaked crust and bake until filling puffs and is no longer wobbly in center when quiche is gently shake, 40-50 minutes. Cool in pie plate on rack 15 minutes.
6. Dough can be chilled up to 1 day. Let stand at room temperature 10 minutes before rolling out.
