Ingredients

  • 20 sheets phyllo dough, Athena brand
  • 146 ⅔ grams butter, unsalted melted
  • kilogram crab claw meat
  • 1 ½ teaspoons fresh ginger root
  • 6 ⅔ grams fresh mint chopped
  • 10 grams cilantro chopped
  • 2 teaspoons sesame oil
  • 63 ⅓ grams mayonnaise
  • teaspoon salt
  • egg beaten
  • 1 ⅓ tablespoons sesame seeds
  • Dipping Sauce
  • 1 ⅔ teaspoons tamarind pulp
  • 3 ⅓ cloves garlic
  • 1 ⅔ chile, jalapeno minced
  • 1 ⅔ teaspoons sugar, caster
  • 91 ⅔ milliliters white vinegar
  • 141 ⅔ milliliters olive oil, virgin
  • teaspoon salt

Directions

1. Crab mixture. Combine crab with ginger and mayonnaise.
2. Preheat oven to 450*F/230*C/GM 8
3. Layer 3 sheets of phyllo(2 sheets of Athena brand the smaller size phyllo), buttering each layer. Cut in half, length-wise (don't do this with Athena). Spread crab mixture along leading edge of each half. Roll up, sealing with water. Cut each roll crosswise into 4 sticks (yes, even with Athena brand) and arrange, seam sides down, 1 inch apart on 2 large baking sheets. Lightly brush top of rolls with egg and sprinkle with sesame seeds and salt. Bake sticks in upper and lower thirds of oven, switching position of sheets halfway through baking, until phyllo is golden brown, about 15 minutes total.
4. Make dipping sauce. Mix all ingredients in blender except for oil. When smooth, add oil slowly to make a thick sauce. Tamarind paste is tart so helps emulsify. Grapeseed oil is great to sauté with and is very light in flavor.
5. To serve: Place spring roll in romaine leaf and garnish with cilantro and mint. Dip in sauce.

Notes:30 servings was fine for 35 people and 7 savories total for light buffet style dinner. 1 1/2 hours prep time. 10 min at party.Athena brand phyllo is smaller, therefore used only 2 layers and didn't divide in half. Cutting roll into 4ths is great size and made 2x number of servings in rolls.
I increased seasoning on crab rolls. Added sesame oil, mint, cilantro & salt. See how it works. Dipping sauce is great, nice and spicey.

Serving Ideas:Original makes 40 appetizers, serves 20. x4

Suggested Wine:Change servings from 35 to 30. Rescale to 20.
