Ingredients
- 2 tablespoons butter, unsalted
- 1 small shallot, finely chop
- 2 granny Smith apple, peel, core, dice into cranberry size pieces
- 1 teaspoon fresh thyme, chopped
- ½ cup golden raisins
- 3 cups cranberries
- ½ lemon, zested and juiced
- ½ cup orange juice
- 2 tablespoons sugar
Directions
1. Heat butter in saucepan. Sauté shallot until slightly golden. Add apples, thyme and sauté until tender. Add remaining ingredients and simmer until lmixture has thickened, about 20 minutes. Remove from heat and let cool. Transfer to serving bowl and serve. |
2. Can be made a day ahead and kept in refrigerator covered. |
