Ingredients
- 7 lbs. figs fresh
- ¼ cup baking soda
- boiling water
- 3 tablespoons whole cloves
- 2 cups cider vinegar
- 8 cups sugar, caster
- 1 ½ cinnamon stick
Directions
1. Wash and drain figs. Sprinkle figs with baking soda and cover with boiling water. Let stand for 5 minutes. Drain and rinse well. Place 1 clove in each fig. |
2. In a large non-reactive kettle, heat vinegar, sugar and cinnamon stick. When sugar dissolved and up to a boil add figs. Simmer 8 minutes. Cool. Cover and leave for 24 hours. |
3. Drain syrup into another pan. Bring to boil. Pour syrup back over figs and let stand for 48 hours. |
4. Steralize jars. Drain syrup into another pan. Bring to boil. Add figs and heat through. Pack into steralized jars and seal. |
