Ingredients

  • 1 tablespoon yeast
  • 5 cups flour, all-purpose
  • 1 tablespoon salt
  • 1 tablespoon olive oil
  • 1 ½ cups water lukewarm

Directions

1. Sift yeast with 4 cups of the flour and salt. Add oil and water. Combine and knead until smooth. (Add enough of remaining cup of flour so dough not sticky and kneads to a smooth, pliable dough.) Clean bowl, oil and place dough back in bowl. Cover and let rise until spider webby when dough pulled from sides of bowl. Knock back and roll into 2 long loaves. Place on baking sheet. Slice tops of loaves with sharp knife.
2. Let rise until double in bulk, or when lightly touched with finger, indentation does not remain.
3. Preheat oven to 400*F. Add a pan of boiling water to lower rack of oven.
4. Bake bread in top of oven about 30-35 minutes, until bottom sounds hollow when lightly tapped. Remove to wire rack to cool.
