Ingredients
- 1 tablespoon yeast
- 5 cups flour, all-purpose
- 1 tablespoon salt
- 1 tablespoon olive oil
- 1 ½ cups water lukewarm
Directions
1. Sift yeast with 4 cups of the flour and salt. Add oil and water. Combine and knead until smooth. (Add enough of remaining cup of flour so dough not sticky and kneads to a smooth, pliable dough.) Clean bowl, oil and place dough back in bowl. Cover and let rise until spider webby when dough pulled from sides of bowl. Knock back and roll into 2 long loaves. Place on baking sheet. Slice tops of loaves with sharp knife. |
2. Let rise until double in bulk, or when lightly touched with finger, indentation does not remain. |
3. Preheat oven to 400*F. Add a pan of boiling water to lower rack of oven. |
4. Bake bread in top of oven about 30-35 minutes, until bottom sounds hollow when lightly tapped. Remove to wire rack to cool. |
