Ingredients
- 500 grams pinto beans dried
- hot water
- 200 grams onion cut into wedges
- 1 ⅓ cloves garlic
- 1 ⅓ slices bacon, streaky
- ⅔ teaspoon salt
- 2 ⅔ tablespoons chili powder
- ⅔ teaspoon cumin powder
- 4 tablespoons parmesan Regiano cheese grated
Directions
Sort beans. Place beans in bowl, cover with hot water let stand 8 hours or overnight. Drain and rinse well. Add fresh hot water to cover generously. Bring to a boil; reduce heat. Add onion, garlic and bacon. Cover with lid ajar and simmer 2 hours. When beans cooked, add salt. Simmer 4 hours longer or until beans are very tender. Add water as needed. Add chili powder and cumin to some bean liquid. Combine with beans. Allow to sit for a few hours. Garnish with cheese. |
