Ingredients

  • Galette dough
  • 125 grams flour
  • ¼ teaspoon salt
  • teaspoon sugar, caster
  • 85 grams butter, unsalted
  • 2 ½ tablespoons ice water
  • 3 tablespoons cheese, mascarpone
  • 45 grams white chocolate finely chopped
  • 1 cup berries
  • 1 tablespoon almonds, sliced
  • 1 egg yolk beaten
  • ½ tablespoon whipping cream
  • powdered sugar

Directions

1. Dough - Combine flour, salt, sugar. Cut in half of the cool butter, not hard or soft, and work lightly until dough is roughly the texture of cornmeal. Add other half of butter until marble sized chunks. work very briefly - butter will not be fully incorporated and will be unevenly distributed. Lightly fork in ice water until evenly moistened.
2. Cover with plastic wrap, knead lightly forming a disk. Let dough rest in refrigerator at least an hour. Bring to roon temperature before rolling out into 12" circle. Transfer to parchment lined baking sheet.
3. Preheat oven to 350*F/175*C/GM 4.
4. Smear mascarpone cheese over dough, leaving about 1" of dough around outside edge. Place white chocolate evenly over mascarpone. Place berries and sliced almonds on top. Fold outside inch of dough back over the filling. Brush outside crust with yolk mixed with cream.
5. Bake galette in oven for 20-25 minutes until berries begin to burst and cheese turns golden. Sprinkle lightly with powdered sugar.
