Ingredients

  • 55 grams butter, unsalted melted
  • 80 grams pecans toasted
  • 25 grams cake flour
  • 1 tablespoon unsweetened cocoa powder
  • 1 ½ teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • 5 large eggs separated
  • 70 grams packed brown sugar
  • 75 milliliters molasses
  • Filling
  • 295 milliliters heavy cream
  • 1 tablespoon sugar
  • ½ cup crystallized ginger
  • Honey-Glazed Pecans
  • 55 grams honey warmed
  • 55 grams pecans
  • ½ tablespoon sugar

Directions

1. Cake: Preheat oven to 350*F/175*C/GM 4. Line bottome and sides of a 15x10x1" jelly-roll pan with parchment paper, 2 layers. Butter, flour sugar paper.
2. Finely grind pecans with cake flour, cocoa, spices and salt in food processor. Beat together yolks, brown sugar and molasses until to the ribbon. Fold in pecan mixture. Transfer 1 cup batter to another bowl and fold in butter, then meringue remaining batter.
3. Beat whites to soft peaks. Meringue mixture, then fold in remaining whites.
4. Spread batter in pan. Bake until set and firm to the touch, about 12 minutes. Cool in pan on a rack covered with a damp tea towel for 10 minutes.
5. Filling: Beat cream with sugar until stiff peaks.
6. Place a sheet of parchment on work surface and sprinkle generously with powdered sugar. Invert cake onto paper and gently peel off paper. Spoon three fourths of cream over cake leaving 1/2" border around edges. Sprinkle three fourths of ginger on cake. Roll up cake and transfer, seam side down, to a platter.
7. Just before serving, spoon or pipe remaining cream on top of roulade and sprinkle with pecans and ginger.
8. NOTE: Cake can be made 2 days ahead and kept, wrapped well in plastic at room temperature. Roulade may be filled and rolled 1 day ahead, then chilled, covered. It is actually better this way to allow flavors to develop and cake becomes more moist. Cake is a genois type cake so on the dry side.
