Ingredients
- 450 grams golden raisins
- 450 grams pecans halved
- 375 grams flour
- ½ teaspoon salt
- 450 grams butter, unsalted
- 400 grams sugar, caster
- 6 large eggs separated
- 1 teaspoon baking soda
- 1 tablespoon lukewarm water
- 30 grams lemon extract YES, 30 grams
Directions
1. Put oven rack in middle position and preheat oven to 250*F/120*C/GM1. Line bottom and sides of loaf pans with parchment paper. |
2. Toss raisins and pecans with 1 cup flour until coated well and set aside. |
3. Whisk salt into remaining flour in a small bowl. |
4. Beat butter in a large bowl until light and fluffy, then add sugar and beat until light and fluffy again. Add yolks, one at a time, and beat until incorporated, then add flour until just combined. |
5. Stir baking soda into lukewarm water in a small bowl until dissolved, then add to butter mixture along with lemon extract and stir until smooth. Stir in raisins and nuts, including all flour, with a wooden spoon until raisins and nuts are coated and no visible traces of flour remain. |
6. Beat egg whites in a clean bowl until they just hold stiff peaks. Fold into batter until combined. |
7. Divide batter between loaf pans and smooth tops by gently rapping bottom of each pan against counter. |
8. Bake until tops of cakes are golden and a wooden pick or skewer inserted in center of each cake comes out clean, about 2 3/4 hours. Cool cakes in pans on racks 10 minutes, then turn out onto racks. Peel off and discard parchment and cool cakes completely, about 3 hours. |
9. Fruitcake is best when made at least 1 day ahead and can be kept, wrapped in plastic wrap, in an airtight container at room temperature 2 weeks or frozen 1 month. |
10. This is a light fruitcake with a surprisingly subtle lemon flavor. It stays moist due to the low temperature baking. |
