Ingredients
- 4 slices bacon, streaky diced
- 1 large onion sliced
- 2 cloves garlic minced
- 28 ounces tomatoes, canned
- 6 chile, jalapeno minced
- ½ teaspoon salt
- ½ teaspoon oregano
- 6 large eggs
- 1 ½ cups cheese, jack grated
- ¼ cup cilantro chopped
- 2 cups masa harina
- 1 ½ cups water
Directions
1. Fry bacon until crisp. Remove from pan and drain. Add onion to bacon drippings and sauté until soft. Add jalapeños. |
2. While onions sautéing, make tortillas. |
3. Add garlic to onions. Stir in tomatoes, chilies, salt and oregano. Simmer for about 15 minutes until sauce thickens. Reduce heat to low and crack eggs and slowly slip into sauce, one at a time. Cover and simmer until eggs are just about set, about 10 minutes. Sprinkle cheese on top and cover for 2 more minutes until set. |
4. Serve with guacamole and flour tortillas. |
5. Serve on warm plates with bacon and cilantro sprinkled on top eggs. |
