Ingredients
- 685 grams bread flour
- 162 grams oatmeal
- 36 ¼ grams sugar, brown
- 2 teaspoons salt
- 30 grams yeast, fresh
- 225 milliliters milk blood temperature
- 110 milliliters water
- 110 grams butter, unsalted melted
- 82 grams molasses
- 2 eggs
Directions
1. Combine yeast with blood temperature milk and water. (Or hot water added to cold milk.) Sift flour & salt. Add remaining ingredients. Add dissolved yeast mixture. Combine into a ball. Dough should be moist but not sloppy or too dry. Knead until smooth, about 5 minutes. Put into an oiled bag and let rise. Or put in slightly oiled bowl, cover and let rise. Dough is doubled in bulk once bottom of dough in bowl is spider web texture. Knock back dough, i.e. knead until air bubbles are evenly distributed and very small. Shape into a large loaf and place in oiled bread pan. Cover and let rise until when lightly pressed with finger it almost springs back. Do not let it over rise and get large air bubbles near the surface. |
2. Glaze top with milk and sprinkle oatmeal on surface. |
3. Bake in 375*F/190*C/GM 5 oven for 40 minutes or until bread comes out of pan, bottom is dry and when bottom tapped it sounds hollow. |
