Ingredients

  • 2 lbs. japanese eggplant sliced lengthwise
  • cup olive oil
  • 6 ounces ground beef
  • 6 ounces ground pork
  • 5 teaspoons salt
  • cup red wine
  • 1 cup vegetable oil
  • 28 ounces whole tomatoes peel, chop w/ juice
  • ½ large onion diced
  • 3 cloves garlic chopped
  • ¼ cup fresh basil tear into pieces
  • 1 small peperoncino dried
  • 1 cup green peas
  • black pepper to taste
  • 3 tablespoons breadcrumbs dried
  • 12 ounces pasta penne, tubular
  • ½ cup cheese, pecorino grated
  • ½ cup cheese, parmesan Regiano
  • 3 eggs, hard-boiled sliced
  • ½ cup Prosciutto Dry Ital ham/salami
  • 6 slices cheese, provolone Caciocavallo

Directions

1. Sprinkle eggplant with salt, let sit for 30 minutes.
2. Heat 1 tablespoon oil and saute beef and pork until brown. Add wine and cook until nearly evaporated. Transfer to bowl.
3. Sauté eggplant in vegetable oil until brown, adding oil as needed. Wipe out pan.
4. Sauté onions and then garlic in olive oil until softened. Add basil and peperoncino and cook 1 minute. Add tomatoes and meat and simmer 25 minutes. Add peas and cook 5 minutes. Season with salt and pepper.
5. Brush10" diameter by 3" high casserole dish with olive oil. Coat bottom with bread crumbs, discarding any extra. Arrange eggplant on bottom. Overlap verticle slices for sides. Slices should be 1" or so above dish. Reserve enough to cover top then dice up extra and add to meat mixture.
6. Cook pasta then add to meat mixture. Add romano and combine.
7. Assemble: Pour one third of pasta mixture into casserole dish. Spread half of Parmigiano over. Next, arrange half of egg slices. Then half of ham then half of provolone. Press down gently. Repeat layers. Top with remaining pasta then eggplant slices. Fold over edge pieces. Cover with plastic wrap and press down to compress and hold ingredients together. Refrigerate 30 minutes. (Can be made up to 24 hours ahead up to this point.)
8. Remove plastic wrap and cover with aluminum foil. Bake 30-45 minutes at 375-400*F/180-200*C/GM 5-6. Remove from oven and let sit a minute. Carefully invert onto a plate.
