Ingredients

  • 200 grams sugar, caster
  • 225 grams sour cream
  • 2 large eggs
  • 2 teaspoons vanilla
  • 250 grams flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 138 grams apple, green peel and chop
  • 108 grams pecans chopped
  • 55 grams butter, unsalted
  • 50 grams sugar, caster

Directions

1. Preheat oven to 350*F/175*C/GM 4.
2. Beat sugar, sour cream, eggs and vanilla until combined then continue beating for 2 minutes. Stir together flour, baking powder, baking soda and salt. Add to sour cream mixture. Stir in apple and 1/2 of pecans. Turn into a greased 9x5x3" loaf pan. sprinkle with remaining pecans. Press lightly into batter.
3. Bake for 55 to 60 minutes until toothpick inserted in center comes out clean. Cool in pan on a wire rack for 10 minutes.
4. Meanwhikle, in a small saucepan, combine butter and brown sugar. Cook and stir until mixture comes to a boil. Reduce heat and boil gently for 1 minute. Drizzle top with brown sugar mixture. Cool.
