Ingredients

  • For Turkey
  • 5 ½ kilograms turkey
  • 450 grams pearl onions
  • 900 grams apples, gala Small Lady apples
  • 85 grams butter, unsalted
  • Gravy
  • 900 milliliters chicken stock
  • 225 milliliters apple cider
  • 30 milliliters cider vinegar
  • 30 grams plain flour
  • Garnish
  • fried sage leaves

Directions

1. Roast Turkey: Preheat oven to 425*F/220*C/GM 7. Rinse turkey inside and ou;and pat dry. Season with salt and pepper inside and out. Fold neck skin under body and secure with a small skewer. Weigh turkey. Calculate total time at 15 min. per pound, no extra 20 minutes because of the initial high temperature.
2. Put turkey on a rack set in a large roasting pan. Roast turkey in middle of oven 30 minutes.
3. While turkey is roasting, blanch onions. Peel. Toss onions and apples in separate bowls with 1 tablespoon melted butter each and salt and pepper to taste.
4. Reduce temperature to 350*F/170*C/GM 4. Brush remaining 1/4 cup melted butter over turkey and roast 30 minutes more. Baste turkey and scatter onions around it, then roast 30 minutes more.
5. Baste turkey and add apples to roasting pan. Roast another 1 to 1 1/2 hours or until done. Let turkey rest 30 minutes, up to 45.
6. Gravy. Reduce apple cider and vinegar to 1/4. Skim fat from pan juices and reserve 1/4 cup fat. Pour into measure cup and add stock to make 4 cups total. Pour back into roasting pan and set over burner. Add cider and vinegar and simmer. Transfer to bowl. Whisk together reserved fat and flour and make roux. Add stock mixture, then simmer until thickened, about 10 minutes. Pour gravy through a fine sieve into a gravy boat.
