Ingredients

  • 300 grams spinach, 1 package frozen spinach
  • 225 grams feta cheese crumbled, = 1 package Athena Feta
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 125 grams butter, unsalted, melted, =1cube+1T
  • 225 grams phyllo dough, Athena brand thawed

Directions

1. Warm up frozen spinach. Squeeze handfuls of spinach to remove as much liquid as possible, then coarsely chop. Transfer to a bowl and stir in feta, and seasonings.
2. Preheat oven to 375*F, 190*C, GM 5. Melt butter in microwave until nice and separated.
3. Cover phyllo stack with 2 overlapping sheets of plastic wrap.
4. Athena brand is smaller in size, therefore use 2 sheets and cut into 5ths.
5. Take 1 phyllo sheet from stack and arrange on a work surface with a long side nearest you and brush with butter. Top with another phyllo sheet and brush with more butter. Cut phyllo stack crosswise into 6 strips. Put a heaping teaspoon of filling near 1 corner of a strip on end nearest you, then fold corner of phyllo over to enclose filling and form a triangle. Continue folding strip (like a flag), maintaining triangle shape. Put triangle, seam side down, on a large baking sheet and brush top with butter. Make more triangles in same manner, using all of phyllo.
6. Also tried cutting entire package of filo into strips about 1 1/2-2" widths, short side is length of strip. Then took one stack and buttered top layer, added small amt of cheese mixture and rolled single layer up flagwise. Buttered top layer, etc. 70 pieces took about 45 minutes to roll. The cheese mixture with 225g feta, didn't use up entire 1/2 lb package, used about 2/3s of it. Made about 70 bite size pieces- about 1 2/3 full baking trays. If anything, should have added a bit more cheese mixture for the amount of phyllo so 2" wide strip probably better. Baked faster than below. To use 225 g filo then 1 1/2 times recipe so about 100 pastries.
7. Bake triangles in middle of oven until golden brown, 20 to 25 minutes, then transfer to a rack to cool slightly.
8. Triangles can be formed, but not baked, 3 days ahead. Arrange in 1 layer in heavy-duty sealed plastic bags, then freeze. Bake frozen pastries in same manner as above. Do not thaw.
