Ingredients
- Chicken or Quail Marinade
- 1 ½ cups chicken breast raw, cubed
- 1 clove garlic minced
- ¼ cup onion finely chopped
- ¼ cup celery finely chopped
- 7 peppercorns crushed
- 1 bay leaf crushed
- 2 tablespoons Madeira
- ⅛ teaspoon salt
- Spinach Layer
- 570 grams frozen spinach blanch, squeeze dry
- 2 tablespoons butter, unsalted
- 3 large shallot finely chopped
- ⅛ teaspoon nutmeg
- ¼ teaspoon salt
- Mushroom Layer
- 3 tablespoons butter, unsalted
- 2 cups mushroom, white sliced
- ¼ teaspoon salt
- Béchamel Sauce
- 1 cup whipping cream
- 1 teaspoon onion grated
- 1 bay leaf
- 1 blade mace
- 4 white peppercorns
- salt, pepper, nutmeg
- 3 tablespoons butter, unsalted
- 2 tablespoons plain flour
- 4 eggs beaten
Directions
1. Marinade: Combine all marinade ingredients and marinate for 6-8 hours. |
2. Spinach: Sauté shallots until golden. Add spinach and seasonings and continue cooking until dry. |
3. Mushrooms: Sauté mushrooms until soft and dry. |
4. Sauce: Scald creme with onion, bay leaf, mace, and peppercorns. Remove from heat and let infuse for 10 minutes. Melt 2 tablespoons of butter, add flour and cook for 1 minute. Remove from heat and add strained cream. Once incorporated, return to heat and add remaining ingredients. Stir until spoon coating consistency. Remove from heat and whisk in remaining tablespoon of butter for a shiny sauce. Adjust seasoning. Pour over beaten eggs and whisk well. Combine with spinach mixture. |
5. Prepare terrine: Preheat oven to 350*F/170*C/GM 4. Oil a large loaf pan. Place 1/3 spinach mixture on bottom. Next all of chicken mixture with bay leaf removed. Then another 1/3 of spinach mixture. Layer with mushrooms. Top with remaining spinach mixture. Cover tightly with foil. Bake in bain-marie for about 1 hour until set. |
6. Allow to cool. Refrigerate overnight or several days for flavors to meld. Serve cool with crustards. |
