Ingredients
- 3.5 lbs Rib roast, 2 bones
- olive oil
- salt & pepper
- 1 cup red wine
- 2 fresh sage leaves
Directions
1. Need Large terra cotta pot and bottom dish that will fit in oven. |
2. Place roast upright onto rimmed cookie sheet with rack. Place dry towels loosely on top of roast to draw moisture away from meat. Place into refrigerator for 3 days, changing towels daily. |
3. Place terra cotta planter and bottom in cold oven to avoid cracking. |
4. Rub roast well with oil. Salt and pepper. Place roast in glass dish in planter bottom. Place oven probe in center of roast, thread through planter top and attach to oven. Place cover securely over bottom. Meat probe should be reading meat temperature. Press "meat Probe" and then input 118, press "start". Now press "upper oven", "Bake", "250", "Start". When oven reaches 250*F, turn down to 200*F. |
5. Periodically check meat temperature by pressing "Meat Probe". If you need to change Meat temperature during cooking, press "Meat Probe" twice, input new temperature, and then "Start". |
6. Remove roast to cutting board and tent with heavy duty alum foil. Roast should rest until 130*F reached. Meanwhile, keep terra cotta bottom, glass pan, and top in oven and increase oven temperature to 500*F. If roast not reaching 130*F, put back in oven with probe before 500*F reached. Once 127*F reached then start the 10 minute count down for the crisp, brown crust. Remove roast to cutting board. Rest. |
7. Meanwhile, deglaze glass pan with wine, reduce by half. Bruise sage leaves, add to sauce and cook for 1 minute. Strain and serve on side. |

Started the 10 min count down then. 118*F took 3 hours for the 4-bone roast. 12-28-2010 cooked 2-bone roast that was still at 32*F-so still partially frozen. Started at 430 PM. |

Put back in oven as it was warming to 500*F, when oven @ 350*F. By the time it was 500*F it had gotten up to 127*F. Started the 10 min count down then. 118*F took 3 hours for the 4-bone roast.
