Ingredients
- 15 grams yeast
- 8 grams sugar, caster
- 110 milliliters water body temperature
- 110 milliliters milk body temperature
- 1 teaspoon salt
- 110 grams butter, unsalted melted
- 300 grams bread flour
- 145 grams whole wheat flour
- 30 grams cilantro chopped
- 10 grams mint chopped
- 30 grams sesame seeds
Directions
1. Combine yeast, sugar and water and let stand until foamy. |
2. Stir in milk, salt and 1/4 of the butter. Mix well. Stir in flour. Knead until smooth. Place in oiled bowl, cover and let rise in a warm place until doubled in bulk or spider web texture. |
3. Knock back dough. Divide into number of servings portions and shape into a ball. Roll out one ball to 1/16 inch. Brush with melted butter and sprinkle with cilantro. Fold in edges of the round so they meet in the center and roll into a smooth bun between palms of your hands. Repeat with the remaining balls of dough. |
4. Place buns on a buttered baking sheet, brush lightly with melted butter, sprinkle with sesame seeds, and let rise. |
5. In a bamboo steamer set over simmering water, steam as many buns as will fit without touching, partially covered, until cooked through, about 20 minutes. Steam rest of the buns. |
6. Serve slightly warm. |
