Ingredients

  • 15 grams yeast
  • 8 grams sugar, caster
  • 110 milliliters water body temperature
  • 110 milliliters milk body temperature
  • 1 teaspoon salt
  • 110 grams butter, unsalted melted
  • 300 grams bread flour
  • 145 grams whole wheat flour
  • 30 grams cilantro chopped
  • 10 grams mint chopped
  • 30 grams sesame seeds

Directions

1. Combine yeast, sugar and water and let stand until foamy.
2. Stir in milk, salt and 1/4 of the butter. Mix well. Stir in flour. Knead until smooth. Place in oiled bowl, cover and let rise in a warm place until doubled in bulk or spider web texture.
3. Knock back dough. Divide into number of servings portions and shape into a ball. Roll out one ball to 1/16 inch. Brush with melted butter and sprinkle with cilantro. Fold in edges of the round so they meet in the center and roll into a smooth bun between palms of your hands. Repeat with the remaining balls of dough.
4. Place buns on a buttered baking sheet, brush lightly with melted butter, sprinkle with sesame seeds, and let rise.
5. In a bamboo steamer set over simmering water, steam as many buns as will fit without touching, partially covered, until cooked through, about 20 minutes. Steam rest of the buns.
6. Serve slightly warm.
