Ingredients
- Pastry dough
- 100 grams butter, unsalted softened
- 85 grams powdered sugar
- 250 grams flour
- Pastry Cream
- 50 milliliters milk
- 1 tablespoon powdered cream
- 50 grams passion fruit purée
- 25 grams sugar, caster
- 90 milliliters whipped cream
- 450 grams strawberries trimmed, 8 untrimmed
- 8 wooden skewers
- powdered sugar for dusting
- passion fruit purée decoration
Directions
1. Pastry: Cream butter and sugar. Add flour and mix until just incorporated. Roll out thin and cut dough into triangles before baking. put small hole in top of 90* corner. Bake at 325*F/165*C/GM 3 for 10 minutes until golden. |
2. Pastry Creme: Scald milk. Mix powdered cream, sugar and passion purée. Pour milk over cream mixture. Clean pot and return mixture to stove. Cook until thickened. Let cool and add 3/4 part whipped cream to 1 part pastry cream. |
3. To serve: Place one triangle on plate. Top with strawberries in the corners, same size, and cream in center. Repeat and top with cookie. Make sure the holes in the coolies line up and drive a skewer all the way down. Spike skewer with a strawberry. Garnish plate with passion fruit seeds. |
4. Note: I took one tenth of the given recipe. Not sure if dough and cream portions are correct to come out 8 servings. |
