Ingredients
- 2 tablespoons olive oil
- 100 grams onion diced
- 1 ½ teaspoons garlic minced
- ¼ cup carrots diced
- 2 tablespoons celery diced
- 680 grams sweet potatoes peeled and diced
- 1 ½ teaspoons chilies, chipotle in adobo sauce
- 1400 milliliters chicken stock
- 1 teaspoon ground coriander
- 110 milliliters heavy cream
- 1 ½ teaspoons salt
- Garnish
- 110 grams bacon, streaky diced
- ⅓ cup bell pepper, red diced very small
- ¼ cup spring onions chopped
- 57 ½ grams sour cream
- 1 teaspoon lime juice
Directions
1. Sauté onions, carrots and celery in olive oil until onions soft. Add garlic. Add sweet otatoes, chipotle peppers, chicken stock and coriander. Bring to a boil and reduce the heat to medium. Cook about 25 minutes until sweet potatoes are soft. |
2. Purée soup in blender. Return to the stockpot. Stir in the cream and season with salt. |
3. For the relish, sauté the bacon, stirring until crisp. Drain and discard the bacon grease. Stir in the red peppers and spring onions. Cook about 2 minutes. Combine the sour cream and lime juice. |
4. To serve, spoon soup into serving bowls. Place a dollop os sour cream in the center of the soup and top with a garnish of scallion relish. |
