Ingredients

  • 2 tablespoons olive oil
  • 100 grams onion diced
  • 1 ½ teaspoons garlic minced
  • ¼ cup carrots diced
  • 2 tablespoons celery diced
  • 680 grams sweet potatoes peeled and diced
  • 1 ½ teaspoons chilies, chipotle in adobo sauce
  • 1400 milliliters chicken stock
  • 1 teaspoon ground coriander
  • 110 milliliters heavy cream
  • 1 ½ teaspoons salt
  • Garnish
  • 110 grams bacon, streaky diced
  • cup bell pepper, red diced very small
  • ¼ cup spring onions chopped
  • 57 ½ grams sour cream
  • 1 teaspoon lime juice

Directions

1. Sauté onions, carrots and celery in olive oil until onions soft. Add garlic. Add sweet otatoes, chipotle peppers, chicken stock and coriander. Bring to a boil and reduce the heat to medium. Cook about 25 minutes until sweet potatoes are soft.
2. Purée soup in blender. Return to the stockpot. Stir in the cream and season with salt.
3. For the relish, sauté the bacon, stirring until crisp. Drain and discard the bacon grease. Stir in the red peppers and spring onions. Cook about 2 minutes. Combine the sour cream and lime juice.
4. To serve, spoon soup into serving bowls. Place a dollop os sour cream in the center of the soup and top with a garnish of scallion relish.
