Ingredients

  • Toppings
    • 1 large onion, thinly slice
    • 2 tablespoons butter, unsalted
    • 3 tablespoons mayonaise
    • 1 teaspoon chipotle in adobo sauce
    • 4 slices cheddar cheese
    • 1 large tomato, slice
    • 4 leaves leaf lettuce
    • pickles, etc
    • 4 hamburger buns, preferably onion rolls
  • Hamburgers
    • 1 ½ pounds tenderized round steak, Ask Butcher to tenderize
    • ½ cup flour
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 2 tablespoons olive oil

Directions

1. Sauté onions in butter until caramelized. About 15 minutes depending on how high the heat is.
2. Whisk mayonnaise with chipotle sauce. Place on table along with mustard and ketchup.
3. Prepare all toppings and except for cheese, place on platter on table.
4. Cut buns in half and with inside up place on baking sheet.
5. Preheat broiler.
6. Cut round steak into 4 "patties". Combine flour, salt and pepper. Coat meat with flour mixture. Shake off excess.
7. Remove onions from skillet, keep warm. Add oil to skillet with medium high heat. When shimmering fry meat. May have to do batches so as not to crowd pan. Brown on both sides, about 2-3 minutes per side. If cheese is desired, add slice of cheese 30 seconds before meat is done. Place on platter, or buns if ready.
8. Meanwhile, toast buns. Should take 1 minute or so.
9. Assemble hamburger with some chipotle mayonnaise, caramelized onions, meat, cheese and any and all toppings.
