Ingredients
- 870 milliliters milk
- 330 grams flour
- 6 eggs
- ¾ teaspoon salt
- ¾ cups duck or goose fat
Directions
1. Blend all ingredients and let rest for 30 minutes. |
2. Preheat oven to 425*F/220*C/GM 7. Put dab of duck/goose fat in each muffin tin and heat in oven until fat starts smoking. Add 1/2 Tablespoon batter to muffin tin and return to oven as quickly as possible. Bake 10-12 minutes until puffy and golden. |
3. You can bake the batter all together in a roasting pan, flameproof dish or yorkshire pudding pan. Takes about 40 minutes to bake. |
4. If 6 pudds made, then plan on about 20 minutes to bake, i.e. once meat out and resting. |
5. These can be made ahead and once cooled placed in bag and frozen. Reheat if necessary or use for mini yorkshire pudd with roast beef as appetizer. |
