Ingredients

  • 870 milliliters milk
  • 330 grams flour
  • 6 eggs
  • ¾ teaspoon salt
  • ¾ cups duck or goose fat

Directions

1. Blend all ingredients and let rest for 30 minutes.
2. Preheat oven to 425*F/220*C/GM 7. Put dab of duck/goose fat in each muffin tin and heat in oven until fat starts smoking. Add 1/2 Tablespoon batter to muffin tin and return to oven as quickly as possible. Bake 10-12 minutes until puffy and golden.
3. You can bake the batter all together in a roasting pan, flameproof dish or yorkshire pudding pan. Takes about 40 minutes to bake.
4. If 6 pudds made, then plan on about 20 minutes to bake, i.e. once meat out and resting.
5. These can be made ahead and once cooled placed in bag and frozen. Reheat if necessary or use for mini yorkshire pudd with roast beef as appetizer.

Notes
Serving Ideas:Original servings 24+ "muffins", serves 6.
Suggested Wine:Change servings from 25 back to 6.
